Ingredients
Scale
Potatoes
- 1 1/2 pounds baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
Salad and Dressing
- 1/2 cup Caesar dressing
- 1/4 cup grated Parmesan cheese
- 2 cups chopped romaine lettuce
- 1/2 cup croutons
Garnish
- Extra Parmesan cheese
- Cracked black pepper
Instructions
- Preheat and prepare potatoes: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. In a bowl, toss the halved baby potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
- Roast the potatoes: Spread the potatoes in a single layer on the prepared baking sheet. Roast them in the oven for 30 to 35 minutes, flipping halfway through to ensure even browning, until they are golden and crispy on the outside.
- Cool potatoes and mix salad: Remove the potatoes and allow them to cool slightly. In a large mixing bowl, combine the roasted potatoes with chopped romaine lettuce and Caesar dressing, tossing gently to coat all ingredients evenly.
- Add cheese and croutons: Sprinkle the grated Parmesan cheese and croutons over the salad, then toss again lightly to distribute.
- Serve and garnish: Serve the salad immediately, topping with additional Parmesan cheese and freshly cracked black pepper for extra flavor and presentation.
Notes
- For extra crispiness, try air frying the potatoes instead of roasting.
- To reduce calories and add protein, use a Greek yogurt-based Caesar dressing as a lighter alternative.
- This salad is best served fresh to keep the romaine lettuce crisp and crunchy.
