Ingredients
Scale
Ingredients
- 8 oz pasta
- 1 tbsp olive oil
- 1 cup mushrooms, sliced
- 2 cups spinach
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese
- 1/4 tsp garlic powder
- Salt and pepper, to taste
Instructions
- Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain well and set aside to be combined later with the sauce.
- Sauté the Vegetables: Heat olive oil in a pan over medium heat. Add the sliced mushrooms and sauté for 4-5 minutes until they soften and begin to brown.
- Add Spinach: Add the fresh spinach to the pan with mushrooms. Cook for another 2-3 minutes, stirring occasionally until the spinach is wilted and tender.
- Prepare the Sauce: Stir in the heavy cream, garlic powder, and grated Parmesan cheese into the pan. Season with salt and pepper to taste. Cook for 2-3 minutes, gently stirring, until the sauce thickens and becomes creamy.
- Combine: Add the cooked pasta to the pan with the creamy spinach mushroom sauce. Toss well to ensure the pasta is fully coated with the sauce. Serve immediately while warm.
Notes
- For a lighter version, substitute heavy cream with half-and-half or milk, though the sauce may be less thick.
- You can use any pasta shape you prefer; penne, fettuccine, or spaghetti work well.
- Add crushed red pepper flakes for a bit of heat if desired.
- Freshly grated Parmesan will give the best flavor compared to pre-grated cheese.
- Ensure not to overcook the spinach to retain some texture and color.
