Instructions
- Heat the Milk: Place a large heavy-bottomed saucepan over medium heat. Using a kitchen thermometer, heat the milk to 195°F while stirring almost continuously. Be sure to scrape the bottom of the saucepan to prevent the milk from burning.
- Prepare Dry Mixture: While the milk is heating, whisk together the all-purpose flour, granulated sugar, and Morton kosher salt in a small bowl. Set this dry mixture aside until ready to use.
- Melt Butter: Gently melt the ½ cup of salted butter in a small saucepan over medium heat. Once melted, remove it from the heat and keep it warm for combining later.
- Combine Flour Mixture: Stir the flour, sugar, and salt mixture into the melted butter to form a thick paste. Then add this paste to the hot milk, stirring constantly to avoid lumps, and continue until the mixture comes to a boil.
- Cook the Porridge: Reduce the heat to low and continue cooking the mixture, stirring frequently, for an additional 5 minutes until it thickens and reaches a smooth, pudding-like consistency. Remove from heat when done.
