Ingredients
Scale
Bruschetta Mix
- 4 Roma tomatoes, cored and diced
- ¼ cup basil leaves, chopped
- 1 garlic clove, minced
- 1 tablespoon extra virgin olive oil
- 1–2 teaspoons balsamic vinegar
- Salt, to taste
Cheese Mixture
- 8 oz feta cheese block, crumbled
- ½ block cream cheese (4 oz)
- ½ cup sour cream
- 1 garlic clove, minced
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon olive oil
- Salt, to taste
Garnish
- More basil leaves, chopped
- Red pepper flakes, to taste
- Parmesan cheese, freshly grated, for topping
Instructions
- Preparing the Bruschetta: Core and dice the Roma tomatoes into small cubes. Place them in a bowl and add chopped basil, minced garlic, olive oil, balsamic vinegar, and salt. Toss everything gently to combine well and set aside to marinate, allowing the flavors to meld as you prepare the cheese mixture.
- Preparing the Cheese Mixture: In a food processor, combine the crumbled feta cheese, cream cheese, sour cream, minced garlic, freshly squeezed lemon juice, and olive oil. Puree the mixture until smooth and creamy. Taste and adjust seasoning by adding salt as needed to enhance the flavor.
- Assembling the Dip: Transfer the smooth cheese mixture into a serving dish. Spoon the marinated bruschetta mixture on top evenly, then garnish with additional chopped basil leaves, a sprinkle of red pepper flakes for a slight kick, and freshly grated Parmesan cheese for extra depth and savoriness. Serve immediately or chilled.
Notes
- For best flavor, let the tomato mixture marinate for at least 10 minutes before assembling the dip.
- This dip pairs wonderfully with toasted baguette slices, pita chips, or fresh vegetable sticks.
- You can adjust the amount of red pepper flakes according to your preferred spice level.
- Store leftover dip covered in the refrigerator for up to 3 days.
- If fresh basil is unavailable, substitute with dried basil or fresh parsley, though fresh basil will give the best flavor.
