- Prepare Strawberries: Rinse the strawberries thoroughly and pat them completely dry. Cut off the tops, then use a small spoon or melon baller to gently hollow out the centers, creating space for the cheesecake filling.
- Make Cheesecake Filling: In a small bowl, beat together the softened cream cheese, powdered erythritol (or sugar), and vanilla extract until the mixture is smooth and creamy.
- Fill Strawberries: Transfer the cheesecake mixture into a piping bag or a zip-top bag with a small corner snipped off. Carefully pipe the filling into each hollowed-out strawberry until they are generously filled.
