Description

Delicious and easy-to-make Chocolate Covered Cheesecake Strawberries, perfect for a no-bake dessert. Fresh strawberries are hollowed out and filled with a creamy sweetened cheesecake mixture, then dipped in rich melted dark chocolate and chilled until set. This low-carb, vegetarian treat is ideal for satisfying your sweet tooth with a fresh and elegant presentation.

Ingredients

Scale

Strawberries

  • 12 large fresh strawberries

Cheesecake Filling

  • 4 oz cream cheese, softened
  • 2 tablespoons powdered erythritol or sugar
  • 1/2 teaspoon vanilla extract

Chocolate Coating

  • 1/2 cup dark chocolate chips (or semi-sweet)
  • 1 teaspoon coconut oil

Instructions

  1. Prepare Strawberries: Rinse the strawberries thoroughly and pat them completely dry. Cut off the tops, then use a small spoon or melon baller to gently hollow out the centers, creating space for the cheesecake filling.
  2. Make Cheesecake Filling: In a small bowl, beat together the softened cream cheese, powdered erythritol (or sugar), and vanilla extract until the mixture is smooth and creamy.
  3. Fill Strawberries: Transfer the cheesecake mixture into a piping bag or a zip-top bag with a small corner snipped off. Carefully pipe the filling into each hollowed-out strawberry until they are generously filled.
  4. Melt Chocolate: Place the chocolate chips and coconut oil in a microwave-safe bowl. Melt in 20-second intervals, stirring well between each interval until the chocolate is completely smooth and glossy.
  5. Dip Strawberries: Dip each filled strawberry into the melted chocolate, coating them halfway or fully as desired. Place the dipped strawberries onto a parchment-lined tray for easy clean-up.
  6. Chill: Refrigerate the strawberries for at least 30 minutes to allow the chocolate to set and firm up before serving. Enjoy chilled for the best texture and flavor.

Notes

  • Use room-temperature cream cheese to achieve a smoother, easier-to-pipe filling.
  • For added texture and decoration, drizzle extra melted chocolate over the strawberries or sprinkle with crushed nuts or graham cracker crumbs.
