Instructions

Blend the ingredients until smooth, using the tamper if needed to help the blending process. Then scoop the smooth mixture into a bowl.
  2. Add mix-ins: Gently stir the vegan chocolate chips and peanuts into the blended chickpea mixture, distributing them evenly throughout.
  3. Form cookie dough balls: Using your hands or a spoon, roll the mixture into small balls to resemble cookie dough bites. Serve immediately or refrigerate to firm up.
