Description

Cheesy Ranch Roasted Potatoes with Green Onion Garnish are tender baby red potatoes coated in tangy buttermilk ranch dressing, baked to perfection, and topped with a melty Mexican cheese blend. Finished with a sprinkle of fresh green onions or chives, this dish makes a delicious and hearty side perfect for any meal.

Ingredients

Scale

Potatoes

  • 3 lbs baby red potatoes, unpeeled

Dressing and Seasoning

  • 1/2 cup buttermilk ranch or yogurt ranch dressing
  • Garlic salt, to taste

Toppings

  • 1 to 1 1/2 cups finely shredded Mexican cheese blend
  • 2 tablespoons chives or green onions, optional garnish

Instructions

  1. Prepare the Potatoes: Cut the unpeeled baby red potatoes into 1 to 1.5-inch pieces. In a large 5-quart pot, fill halfway with salted warm water (about 7 cups water and 1 teaspoon salt). Add the potatoes and bring to a boil, then reduce to a low boil and cook for 8-12 minutes, or until easily pierced with a fork. Drain the potatoes thoroughly.
  2. Coat with Ranch Dressing: Drizzle 1/2 cup of buttermilk ranch or yogurt ranch dressing directly into the pot with the drained potatoes. Gently toss the potatoes to ensure they are evenly coated with the dressing.
  3. Roast the Potatoes: Transfer the ranch-coated potatoes into a greased casserole dish and sprinkle garlic salt over the top to taste. Bake uncovered in a preheated oven at 400°F (200°C) for 20-25 minutes until potatoes are golden and crispy on the edges.
  4. Add Cheese and Broil: Remove the casserole from the oven and switch the oven setting to broil. Evenly sprinkle the top with 1 cup or more of finely shredded Mexican cheese blend. Return the dish to the oven and broil for 2-3 minutes until the cheese melts and turns golden brown.
  5. Garnish and Serve: If desired, sprinkle chopped chives or green onions over the cheesy potatoes as garnish. Adjust garlic salt seasoning if needed before serving hot.

Notes

  • Use baby red potatoes unpeeled as the skin adds texture and nutrition.
  • Drain potatoes well after boiling to avoid soggy roasted potatoes.
  • The ranch dressing can be homemade or store-bought yogurt ranch for a tangy flavor.
  • Broil carefully as cheese can burn quickly; watch closely during the final step.
  • Green onions or chives add a fresh, mild onion flavor and vibrant color as garnish.
  • This dish pairs well with grilled meats, roasted chicken, or a fresh salad.
