Description

This Cheesy Cabbage Casserole is a comforting and flavorful dish combining tender sautéed cabbage and onions with a creamy mixture of soup and mayonnaise, topped with melted butter and sharp cheddar cheese then baked to a bubbly golden perfection. Perfect as a hearty side or a vegetarian main, it’s easy to prepare and delivers rich, cheesy goodness in every bite.

Ingredients

Scale

Vegetables

  • 1 small green cabbage, chopped
  • 1 medium Vidalia onion, chopped

Dairy & Fats

  • 8 tbsp butter (for sautéing)
  • 3 tbsp melted butter (for topping)
  • 1 cup shredded sharp cheddar cheese

Other

  • 1 can (10 oz) cream of chicken or mushroom soup
  • â…“ cup mayonnaise
  • Salt and pepper, to taste

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and lightly grease a 2-quart baking dish to prevent sticking during baking.
  2. Sauté Cabbage & Onion: In a large pan over medium heat, melt 8 tablespoons of butter. Add the chopped cabbage and Vidalia onion to the pan.
  3. Cook Vegetables: Sauté the cabbage and onion for 8 to 10 minutes, stirring frequently until the cabbage softens. Season the mixture with salt and pepper according to your taste.
  4. Transfer to Baking Dish: Once the cabbage and onion are softened and seasoned, transfer the mixture evenly into the prepared baking dish.
  5. Mix and Add Creamy Topping: In a bowl, combine the cream of chicken (or mushroom) soup with the mayonnaise until smooth. Spread this creamy mixture evenly over the cabbage and onion layer in the baking dish.
  6. Prepare Cheese Topping: In a separate small bowl, mix the 3 tablespoons of melted butter with the shredded sharp cheddar cheese. Evenly sprinkle this cheesy butter mixture on top of the casserole.
  7. Bake the Casserole: Place the baking dish in the preheated oven and bake for 30 minutes or until the topping is bubbly and golden brown.
  8. Cool and Serve: Remove the casserole from the oven and allow it to cool slightly before serving to let the flavors settle.

Notes

  • You can substitute cream of chicken soup with mushroom soup to keep it vegetarian.
  • Use a sharp cheddar cheese for a richer flavor.
  • Adjust salt and pepper based on your dietary preferences.
  • Allow the casserole to rest for a few minutes after baking to make serving easier.
  • This casserole pairs well with grilled or roasted meats or can be served as a hearty side dish.
