Cheesecake Mixture

  • 1 (8 oz) package cream cheese, softened
  • 1 (3.4 oz) package instant cheesecake pudding mix
  • 1 cup vanilla yogurt
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Fruit

  • 2 cups strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup green grapes, halved
  • 1 cup red grapes, halved
  • 1 cup pineapple chunks
  • 2 bananas, sliced (add just before serving to prevent browning)


Instructions

  1. Prepare the Cheesecake Mixture: In a large mixing bowl, beat the softened cream cheese until smooth. Then add the instant cheesecake pudding mix, vanilla yogurt, heavy cream, powdered sugar, and vanilla extract. Beat all ingredients together until the mixture becomes smooth and fluffy.
  2. Combine the Fruit: In a separate bowl, gently combine all the prepared fruits except bananas – strawberries, blueberries, green grapes, red grapes, and pineapple chunks.
  3. Fold Fruit into Mixture: Carefully fold the mixed fruit into the cheesecake mixture, ensuring that the fruit is evenly coated without crushing.
  4. Chill: Transfer the salad to the refrigerator and chill for at least 1 hour to allow flavors to meld and the salad to firm up.
