Latkes:

  • 2 pounds russet potatoes (peeled and shredded)
  • 1 small onion (grated)
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • vegetable oil for frying

Buffalo Sauce:

  • 1/3 cup buffalo wing sauce
  • 1 tablespoon melted butter

Blue Cheese Dip:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/3 cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon milk or buttermilk
  • 1 tablespoon chopped chives (optional)

Instructions

  1. Prepare Latkes: Squeeze excess moisture from potatoes and onion, mix with eggs, flour, salt, pepper, garlic powder, and paprika. Fry spoonfuls in hot oil until golden.
  2. Make Buffalo Sauce: Warm buffalo sauce and melted butter in a saucepan.
  3. Prepare Blue Cheese Dip: Whisk sour cream, mayonnaise, blue cheese, lemon juice, and milk until creamy. Add chives if desired.
  4. Assemble: Drizzle buffalo sauce over latkes or toss them in the sauce. Serve with blue cheese dip.
