Buffalo Chicken Mixture
- 2 cups cooked shredded chicken
- 1/3 cup Buffalo wing sauce
- 1 tablespoon melted butter
Cheese & Tortillas
- 1 1/2 cups shredded mozzarella or Monterey Jack cheese
- 4 large flour tortillas
- 2 tablespoons chopped green onions

- Nonstick spray or oil for the skillet

- Ranch or blue cheese dressing for dipping
Instructions
- Prepare the Buffalo Chicken: In a bowl, combine the cooked shredded chicken, Buffalo wing sauce, and melted butter, stirring well to coat the chicken evenly with the sauce mixture.
- Heat the Skillet: Warm a large skillet over medium heat and lightly spray with nonstick cooking spray or brush with a little oil to prevent sticking.
- Assemble the Quesadilla: Place one flour tortilla flat in the skillet. On half of the tortilla, sprinkle a layer of shredded cheese, then spoon about 1/2 cup of the Buffalo chicken mixture over the cheese. Add a few chopped green onions and a little more cheese on top to bind the filling.
- Cook the Quesadilla: Fold the tortilla in half to cover the filling. Cook for 2 to 3 minutes on one side until the tortilla is golden brown and crispy, then carefully flip and cook the other side for another 2 to 3 minutes until golden and the cheese is melted.
- Repeat and Serve: Repeat the assembly and cooking process with the remaining tortillas and filling. Let each quesadilla rest for a minute before slicing into wedges. Serve warm with ranch or blue cheese dressing on the side if desired.
Notes
- For extra heat, add a few dashes of hot sauce or sliced jalapeños to the chicken filling before cooking.
- These quesadillas can be made ahead of time and reheated in an oven or air fryer to maintain crispiness.
