Description

Buffalo Chicken Cupcakes are a flavorful and fun appetizer made with shredded chicken tossed in spicy buffalo sauce, cream cheese, ranch dressing, and cheddar cheese, all baked inside flaky biscuit dough cups. Perfect for game day or parties, these savory bites combine creamy, spicy, and tangy flavors in a convenient handheld treat.

Ingredients

Scale

Buffalo Chicken Filling

  • 2 cups cooked chicken (shredded)
  • 1/2 cup buffalo wing sauce
  • 4 oz cream cheese (softened)
  • 1/2 cup ranch or blue cheese dressing
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Biscuit Cups

  • 1 package refrigerated biscuit dough (8 count)
  • 1 tablespoon melted butter
  • 1/4 teaspoon garlic powder

Toppings (Optional)

  • Crumbled blue cheese
  • Extra chopped green onions

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the buffalo chicken cupcakes.
  2. Prepare Buffalo Chicken Mixture: In a medium bowl, combine the shredded cooked chicken with buffalo wing sauce, softened cream cheese, ranch or blue cheese dressing, shredded cheddar cheese, and chopped green onions. Mix thoroughly until well blended.
  3. Prepare Muffin Tin and Biscuit Dough: Lightly grease a muffin tin. Separate the biscuit dough and flatten each biscuit round slightly with your hands. Press each flattened biscuit into the muffin tin cups, pushing up the sides to form a cup shape.
  4. Fill Biscuit Cups: Spoon approximately 2 tablespoons of the buffalo chicken mixture into each biscuit cup, filling them evenly.
  5. Brush Biscuit Edges: In a small bowl, mix the melted butter with garlic powder. Brush this buttery garlic mixture over the edges of each biscuit cup for added flavor and to promote golden browning.
  6. Bake: Place the muffin tin in the preheated oven and bake for 15 to 18 minutes, or until the biscuit dough is golden brown and the filling is hot and bubbly.
  7. Cool and Serve: Allow the buffalo chicken cupcakes to cool for about 5 minutes before carefully removing them from the muffin tin. Optionally, top each cupcake with crumbled blue cheese and extra chopped green onions before serving.

Notes

  • Rotisserie chicken works well for this recipe and saves time.
  • Adjust the spiciness by adding more hot sauce for extra heat.
  • For a milder taste, reduce the amount of buffalo wing sauce and increase the ranch or blue cheese dressing.
