Brownie Cookies:
- 1 cup semisweet chocolate chips
- 2 oz unsweetened chocolate, chopped
- ¼ cup unsalted butter
- ⅔ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup mini chocolate chips or chopped chocolate (optional mix-in)
Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Melt chocolate and butter: In a microwave-safe bowl, melt the semisweet chocolate chips, unsweetened chocolate, and butter together in 30-second intervals until smooth. Let cool slightly.
- Whisk sugar, eggs, and vanilla: In a separate bowl, whisk together the sugar, eggs, and vanilla extract until light and slightly thickened, about 2 minutes.
- Combine wet and dry ingredients: Slowly pour the melted chocolate mixture into the egg mixture and stir until combined. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix just until combined.
- Add optional mix-ins: Fold in the optional chocolate chips or chopped chocolate if using. Let the batter sit for 10 minutes to thicken slightly.
- Bake the cookies: Scoop tablespoon-sized portions onto the prepared baking sheets, spacing them 2 inches apart. Bake for 9–11 minutes until the tops are shiny and cracked but the centers are still soft.
- Cool and enjoy: Let cool on the pan for 5 minutes before transferring to a wire rack.
