Dry Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tablespoons brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda

Wet Ingredients:
- 1 cup mashed ripe bananas (about 2 medium bananas)
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- additional butter or oil for cooking
Instructions
- Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
- Cooking: Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil. Pour 1/4 cup of batter per pancake onto the hot surface. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1–2 minutes, until golden brown and cooked through.
- Serve warm with syrup, sliced bananas, or extra brown sugar sprinkled on top.
Wet Ingredients: In another bowl, combine the mashed bananas, buttermilk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
Notes
- You can substitute buttermilk with regular milk plus 1 tablespoon lemon juice or vinegar.
- For extra flavor, add a handful of chocolate chips or chopped walnuts to the batter.
