Ingredients
Scale
Chicken
- 1.5 lbs boneless skinless chicken breasts
- Salt, to taste
- Black pepper, to taste
- Garlic powder, divided (about 1 tsp total)
- Paprika, to taste
- Italian seasoning, to taste
- 1 Tbsp olive oil
Stuffing
- 1 cup chopped broccoli florets
- 1 cup shredded cheddar cheese
- ¼ cup cream cheese
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the stuffed chicken.
- Prepare the chicken breasts: Carefully slice each chicken breast horizontally to create a pocket without cutting all the way through, ensuring ample space for the filling.
- Season the chicken: Sprinkle salt, black pepper, paprika, and half of the garlic powder evenly over both sides of each chicken breast to enhance flavor.
- Make the stuffing mixture: In a mixing bowl, combine chopped broccoli, shredded cheddar cheese, cream cheese, remaining garlic powder, and season with salt and pepper. Mix thoroughly until well combined.
- Stuff the chicken: Spoon the broccoli and cheese mixture into each chicken breast’s pocket, then secure the openings with toothpicks to keep the filling intact during cooking.
- Sear the chicken: Heat olive oil in a large ovenproof skillet over medium-high heat. Place stuffed chicken breasts in the skillet and sear for 2-3 minutes on each side until they develop a golden brown crust.
- Bake the chicken: Transfer the skillet into the preheated oven and bake for 15-17 minutes until the internal temperature of the chicken reaches 165°F, ensuring it’s fully cooked.
- Serve: Remove the skillet from the oven, carefully discard the toothpicks, and serve the stuffed chicken breasts hot.
Notes
- Use a meat thermometer to check that chicken reaches 165°F to ensure safety and juiciness.
- You can substitute cheddar with mozzarella or pepper jack for a different flavor profile.
- Make sure to not overstuff the chicken pockets to prevent leakage during cooking.
- If you don’t have an ovenproof skillet, sear the chicken in a regular pan then transfer to a baking dish to finish cooking in the oven.
- This dish pairs well with rice, mashed potatoes, or a side salad.
