Crust

Instructions
- Prepare the crust: Preheat the oven to 325°F (160°C) and line a mini muffin tin with paper liners or lightly grease it. In a bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until the texture resembles wet sand.
- Form crust bases: Spoon about 1 teaspoon of the crust mixture into each muffin cup and press down firmly to create an even base for the cheesecake filling.
- Make the filling: In a separate bowl, beat the softened cream cheese until smooth and creamy. Add the sour cream, 1/4 cup granulated sugar, egg, and vanilla extract, mixing until fully combined and well blended.
- Assemble cheesecake bites: Spoon the cheesecake filling over each crust in the muffin tin, filling nearly to the top of each cup.
- Add berry swirl: Place a small drop of berry jam or puree on top of each filling and use a toothpick or skewer to gently swirl the jam into the batter for a marbled effect.
- Bake: Place the muffin tin in the preheated oven and bake for 14 to 16 minutes, or until the centers of the cheesecake bites are just set but still slightly jiggly.
