Description

Delightful bite-sized Berry Swirl Cheesecake Bites featuring a buttery graham cracker crust, creamy cheesecake filling, and a vibrant swirl of berry jam. Perfectly portioned for parties or a sweet treat, these mini cheesecakes are easy to prepare and chilled to perfection for a refreshing finish.

Ingredients

Scale

Crust

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons granulated sugar

Filling

  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Berry Swirl and Garnish

  • 1/4 cup berry jam or puree (raspberry, strawberry, or blueberry)
  • Fresh berries for garnish (optional)

Instructions

  1. Prepare the crust: Preheat the oven to 325°F (160°C) and line a mini muffin tin with paper liners or lightly grease it. In a bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until the texture resembles wet sand.
  2. Form crust bases: Spoon about 1 teaspoon of the crust mixture into each muffin cup and press down firmly to create an even base for the cheesecake filling.
  3. Make the filling: In a separate bowl, beat the softened cream cheese until smooth and creamy. Add the sour cream, 1/4 cup granulated sugar, egg, and vanilla extract, mixing until fully combined and well blended.
  4. Assemble cheesecake bites: Spoon the cheesecake filling over each crust in the muffin tin, filling nearly to the top of each cup.
  5. Add berry swirl: Place a small drop of berry jam or puree on top of each filling and use a toothpick or skewer to gently swirl the jam into the batter for a marbled effect.
  6. Bake: Place the muffin tin in the preheated oven and bake for 14 to 16 minutes, or until the centers of the cheesecake bites are just set but still slightly jiggly.
  7. Cool and chill: Remove from the oven and allow the cheesecake bites to cool completely at room temperature, then chill in the refrigerator for at least 2 hours to set fully.
  8. Serve with garnish: Optionally, top each chilled cheesecake bite with fresh berries before serving for an extra pop of color and flavor.

Notes

  • Warm the berry jam slightly before swirling to make it easier to incorporate into the filling.
  • These cheesecake bites are perfect for parties and can be prepared a day ahead.
  • Store leftover cheesecake bites in the refrigerator for up to 3 days.
