- 1 tablespoon soy sauce

- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 8–10 rice paper wrappers
- 1/4 cup roasted peanuts, chopped (for garnish)
For the Peanut Lime Sauce:
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon fresh lime juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- 1–2 tablespoons warm water (to thin)
Instructions
- Cook the Beef: Heat sesame oil in a skillet, add ground beef, garlic, soy sauce, ginger, and sriracha. Cook until browned. Remove from heat and cool slightly.
- Prepare the Spring Rolls: Dip rice paper wrappers in warm water to soften. Fill with beef, carrots, cabbage, cilantro, and green onions. Roll tightly like a burrito.
- Make the Peanut Lime Sauce: Whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, and water until smooth.
- Serve: Serve the spring rolls with the peanut lime sauce and garnish with chopped peanuts.
Notes
- Best served fresh but can be refrigerated for a few hours covered with a damp paper towel.
- Try adding thin rice noodles or using ground turkey for variety.
