Description

These Beef Spring Rolls with Peanut Lime Sauce are a delightful appetizer featuring savory ground beef and crunchy vegetables wrapped in delicate rice paper, served with a zesty peanut lime dipping sauce. Perfect for a light and flavorful snack or party dish!

Ingredients

Scale

For the Spring Rolls:

  • 1 tablespoon sesame oil
  • 1/2 pound ground beef
  • 1 garlic clove, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sriracha (optional)
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 810 rice paper wrappers
  • 1/4 cup roasted peanuts, chopped (for garnish)

For the Peanut Lime Sauce:

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 12 tablespoons warm water (to thin)

Instructions

  1. Cook the Beef: Heat sesame oil in a skillet, add ground beef, garlic, soy sauce, ginger, and sriracha. Cook until browned. Remove from heat and cool slightly.
  2. Prepare the Spring Rolls: Dip rice paper wrappers in warm water to soften. Fill with beef, carrots, cabbage, cilantro, and green onions. Roll tightly like a burrito.
  3. Make the Peanut Lime Sauce: Whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, and water until smooth.
  4. Serve: Serve the spring rolls with the peanut lime sauce and garnish with chopped peanuts.

Notes

  • Best served fresh but can be refrigerated for a few hours covered with a damp paper towel.
  • Try adding thin rice noodles or using ground turkey for variety.
