Potato Skins:
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Toppings:
- 1 cup shredded cheddar cheese
- 6 slices bacon (cooked and crumbled)
- 1/4 cup chopped green onions
- Sour cream for serving
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Bake the potatoes: Scrub the potatoes clean, pierce with a fork, and bake for 45–50 minutes until tender.
- Prepare the skins: Slice each potato in half, scoop out most of the flesh, leaving 1/4 inch. Brush with oil, sprinkle with salt and pepper.
- Bake the skins: Bake cut-side down for 10 minutes, flip and bake for another 10 minutes until crispy.
- Add toppings: Fill each skin with cheese and bacon. Bake for 5–7 minutes until cheese melts.
- Serve: Top with green onions and serve warm with sour cream.
Notes
- For a vegetarian version, skip the bacon and add sautéed mushrooms or black beans.
- You can prepare the skins ahead and reheat before serving.
