Description

These Baked Potato Skins are crispy, cheesy, and loaded with flavorful toppings like bacon and green onions. Perfect as an appetizer or party snack, these potato skins are sure to be a hit at any gathering.

Potato Skins:

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Toppings:

  • 1 cup shredded cheddar cheese
  • 6 slices bacon (cooked and crumbled)
  • 1/4 cup chopped green onions
  • Sour cream for serving


Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Bake the potatoes: Scrub the potatoes clean, pierce with a fork, and bake for 45–50 minutes until tender.
  3. Prepare the skins: Slice each potato in half, scoop out most of the flesh, leaving 1/4 inch. Brush with oil, sprinkle with salt and pepper.
  4. Bake the skins: Bake cut-side down for 10 minutes, flip and bake for another 10 minutes until crispy.
  5. Add toppings: Fill each skin with cheese and bacon. Bake for 5–7 minutes until cheese melts.
  6. Serve: Top with green onions and serve warm with sour cream.

Notes

  • For a vegetarian version, skip the bacon and add sautéed mushrooms or black beans.
  • You can prepare the skins ahead and reheat before serving.
