Ingredients
Scale
Filling
- 2 cups cooked chicken, shredded (rotisserie chicken works great)
- 1/2 cup buffalo sauce (store-bought or homemade)
- 1/4 cup ranch dressing or blue cheese dressing (depending on preference)
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded carrots (optional for crunch)
Assembly
- 10-12 egg roll wrappers
- Olive oil spray or cooking spray
Instructions
- Prepare the Filling: In a large bowl, combine the shredded chicken, buffalo sauce, ranch or blue cheese dressing, and mozzarella cheese. Add the shredded carrots if using. Mix well until everything is evenly coated.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a flat surface, with a corner facing you like a diamond shape.
- Add the Filling: Place 2-3 tablespoons of the buffalo chicken filling in the center of the wrapper.
- Roll the Egg Rolls: Fold the sides of the wrapper over the filling, then roll the egg roll tightly from the bottom to the top. Wet the top corner with a bit of water to seal it securely.
- Repeat Assembly: Repeat with the remaining wrappers and filling until all egg rolls are formed.
- Preheat Air Fryer: Preheat the air fryer to 375°F (190°C) for about 3 minutes to ensure even cooking.
- Prepare Air Fryer Basket: Lightly spray the air fryer basket with olive oil spray to prevent the egg rolls from sticking.
- Arrange Egg Rolls: Place the assembled egg rolls in a single layer in the air fryer basket. Spray the tops of the egg rolls lightly with olive oil spray to promote crispiness.
- Air Fry: Cook at 375°F (190°C) for 8-10 minutes, flipping the egg rolls halfway through the cooking time, until they are golden brown and crispy on all sides.
- Serve: Carefully remove the egg rolls from the air fryer and serve immediately.
- Optional Dipping: Serve with extra buffalo sauce, ranch dressing, or blue cheese dressing for dipping to enhance the flavor.
Notes
- For extra crispiness, you can brush the egg rolls with a little olive oil instead of spraying.
- Adjust the amount of buffalo sauce based on your preferred spice level.
- Use gloves or toss quickly when mixing buffalo sauce to avoid skin irritation from the hot sauce.
- Feel free to add diced celery for extra crunch if desired.
- Make sure not to overfill the egg rolls to prevent them from bursting open while cooking.
- Use a damp cloth to cover assembled egg rolls if not cooking immediately to prevent wrappers from drying out.
