- ¼ teaspoon salt
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
For the fruit topping:
- 1 cup fresh strawberries (sliced)
- 1 cup kiwi (peeled and sliced)
- ½ cup blueberries
- ½ cup mandarin oranges (drained, if canned)
- 1 tablespoon apricot jam (optional, for glaze)
Instructions
- For the crust: Preheat the oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter. Press into a greased 9×9-inch baking dish. Bake for 10 minutes and let cool.
- For the custard filling: In a saucepan, whisk together milk, sugar, cornstarch, flour, and salt. Cook until thickened. Beat egg yolks, temper with milk mixture, then combine. Cook until creamy. Stir in vanilla and butter. Pour over crust and refrigerate for 3 hours.
- For the fruit topping: Top custard with sliced fruit. Warm apricot jam and brush over the fruit. Slice into bars and serve chilled.
