Meatloaf Mixture

  • 1 1/2 pounds ground beef

Instructions

  1. Preheat and Sauté: Preheat your oven to 375°F (190°C). Heat olive oil in a skillet over medium heat, then add mushrooms, onion, and garlic. Sauté until softened, about 5 minutes, then transfer the mixture to a large mixing bowl and let cool slightly.
  2. Mix Ingredients: Into the cooled vegetable mixture, add the ground beef, ground pork, Worcestershire sauce, breadcrumbs, eggs, milk, salt, pepper, 1 cup of the shredded Swiss cheese, and chopped parsley. Mix gently until just combined to avoid a dense meatloaf.
  3. Shape and Prepare for Baking: Shape the meat mixture into a loaf and place it in a greased 9×5-inch loaf pan or on a parchment-lined baking sheet. Spread the ketchup evenly over the top of the meatloaf.
  4. Bake: Bake uncovered in the preheated oven for 50 to 55 minutes or until the meatloaf reaches an internal temperature of 160°F (70°C), indicating it is fully cooked.
  5. Add Cheese: During the last 5 minutes of baking, sprinkle the remaining 1/2 cup of Swiss cheese over the top to melt and create a cheesy crust.
  6. Rest and Serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps retain the juices and makes for easier slicing.
