Ingredients
Scale
Meatloaf Mixture
- 1 1/2 pounds ground beef
- 1/2 pound ground pork
- 1 tablespoon olive oil
- 1 cup mushrooms, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- 1 cup breadcrumbs
- 2 large eggs, lightly beaten
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded Swiss cheese, divided
- 1/4 cup fresh parsley, chopped
Topping
- 1/2 cup ketchup
Instructions
- Preheat and Sauté: Preheat your oven to 375°F (190°C). Heat olive oil in a skillet over medium heat, then add mushrooms, onion, and garlic. Sauté until softened, about 5 minutes, then transfer the mixture to a large mixing bowl and let cool slightly.
- Mix Ingredients: Into the cooled vegetable mixture, add the ground beef, ground pork, Worcestershire sauce, breadcrumbs, eggs, milk, salt, pepper, 1 cup of the shredded Swiss cheese, and chopped parsley. Mix gently until just combined to avoid a dense meatloaf.
- Shape and Prepare for Baking: Shape the meat mixture into a loaf and place it in a greased 9×5-inch loaf pan or on a parchment-lined baking sheet. Spread the ketchup evenly over the top of the meatloaf.
- Bake: Bake uncovered in the preheated oven for 50 to 55 minutes or until the meatloaf reaches an internal temperature of 160°F (70°C), indicating it is fully cooked.
- Add Cheese: During the last 5 minutes of baking, sprinkle the remaining 1/2 cup of Swiss cheese over the top to melt and create a cheesy crust.
- Rest and Serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps retain the juices and makes for easier slicing.
Notes
- For added flavor and texture, try incorporating sautéed bell peppers with the mushrooms and onions.
- Using smoked Swiss cheese adds a deeper, smoky flavor to the dish.
- Leftovers can be repurposed for delicious meatloaf sandwiches the next day.
- This meatloaf can be assembled ahead of time and refrigerated before baking to save time.
